Abstract

Ascorbic acid (Vitamin C) Occurs as ascorbic acid and dehydro-ascorbic acid too. The second one is
extremely heat labile, in or without the company of oxygen. Extremely soluble & easily lost by leaching &
in drip losses, also obliterated by number of plant enzymes, including ascorbic acid oxidase, cytochrome
oxidase, peroxidase, & phenolase. Copper and iron catalyse oxidation in air, but sulphur dioxide protects
against oxidation.[1]
